Food Day!

This recipe makes the entire house smell so good! It is perfect for a rainy cold day, and since we are having one I thought it sounded just right. 

 Slow Cooker Pot Roast with Potatoes and Carrots

Ingredients:

  • Pork Roast (beef is equally delicious)
  • One Lipton Onion Soup mix packet
  • 1/4 cup of Coffee
  • 3-4 potatoes, peeled and chunked (or as many as you can fit in)
  • 4-5 carrots, peeled and chunked (also as many as you can fit in, mini carrots work great as well)




    Place the roast in the slow cooker and pour coffee over the roast. Sprinkle the roast with the onion soup mix (the coffee helps it stick and gives it even more moisture). Turn slow cooker on high. After two hours stick in the potatoes and carrots. You could do them all at once, but I like to add them later because the roast starts to have its own juices come out. Cook on high for 4-6 hours, or low for 8-10 hours. Take out of the crock pot, and enjoy this hot meal on a cold day (or anytime of year)! 



    My husband isn't a huge fan of cooked carrots, but he had two (and he already had started eating before I took the picture)!!!


    This is probably the simplest meal, but tastes like you did a lot of work! 

    Note: With the leftovers, shred the pork and add BBQ sauce. Instant homemade pulled pork sandwiches!
